What We Ate On A High Raw Vegan Diet And Vegan Grocery Shopping

Knowing that diet is a very big part of what gives us our health, we always prioritize the food we eat, whether it’s at home or when we are away on a trip somewhere.

The same goes for our daughter Elanie who has been on a Vegan whole foods diet since birth.

The number of benefits that we have received from eating this way seems almost limitless.

Everything from healthy cholesterol levels, glowing skin, high energy levels and easy weight loss and maintenance, through to being able to do the things we love in life, without the need for medications or drugs that can potentially harm your health.

We eat a high raw vegan diet and have been high carb and fruit-based for over 12 years now.

Even though we are now both in our forties we still feel young and energetic thanks we believe to eating a high raw vegan diet.

Eating this diet is a joy every day especially when you see the great health results that you get for yourself.

We don’t have to worry constantly about what we eat in case we start putting on weight as many people do especially as they reach middle age.

We eat an abundance of whole plant foods on a high raw vegan diet and don’t restrict how many calories or sugary carbs we eat and yet we don’t struggle with our weight.

In our video today we share with you one of our shopping trips and show you some of the fruits and vegetables that we buy that allow us to stay healthy and enjoy life.

These chips are made with raw food ingredients, are vegan and ridiculously tasty!

Kale is one of the most nutrient dense foods on the planet. It’s rich in vitamin A, C, B6 and manganese.

Kale is also one of the highest sources of vitamin K, as well as antioxidants and other vital nutrients.

We personally don’t like really spicy flavours, however if you wanted to make spicy kale chips, then simply add some curry powder. The recipe below include it as an option.

Crunchy Kale Chips Recipe

Ingredients
  • 1 pound (450g) fresh kale
  • 1½ cup fresh tomatoes, any variety
  • ¼ cup chia seeds, pre-soaked in water for 6 hours
  • ½ cup cashew nuts, pre-soaked in water for 6 hours
  • 1 teaspoon turmeric
  • 1 tablespoon lemon or lime juice
  • Optional: 1 teaspoon curry paste
Instructions
  1. Wash the kale and chop into 3 inch pieces.
  2. Place the kale into a bowl.
  3. Blend together tomatoes, chia seeds, cashews, turmeric, lemon juice and optional curry powder.
  4. Pour the sauce over the kale and mix together well.
  5. Place the kale onto the dehydrator trays, spreading it evenly.
  6. Dehydrate for 6-8 hours, depending on how crunchy you want them to be.
  7. Serve and enjoy!
