What do we eat in our vegan family meals as a family of three to stay healthy, fit, and active?

I (Paul) am 47 years old, Yulia is in her late 30’s and our daughter Elanie is now 6 years old. She has been a vegan kid from birth. 

With the healthy high carb vegan family meals we make, we don’t have to worry about putting on excess weight, which many people do, especially as they reach middle age.

Weight gain after 40, along with hormonal imbalances and gut issues is a common challenge for the majority of our clients.   

Vegan diet weight loss is something that naturally happens when you eat a high carb, low-fat whole foods vegan diet and this is something we help our clients achieve.

And here’s the sweet potato soup recipe …

Vegan Sweet Potato Soup Recipe
Prep time:

Total time: 
Serves: 3-5
 
Ingredients
  • 3 cups sweet potatoes
  • 2 cups cabbage
  • 1 grated beetroot
  • 1 cup frozen green peas
  • ½ chopped leek
  • 2 medium tomatoes, chopped
  • Freshly chopped corriander or dill (or both!)
Instructions
  1. Place the sweet potatoes and beetroot in a large cooking pot
  2. Cover with 4-5 cups of clean water
  3. Bring to the boil and boil for 3-4 minutes
  4. Add the cabbage, peas and leek and boil (3-5 minutes, depending on how crunchy you like your veggies)
  5. Turn the stove off and add freshly chopped tomatoes to the soup
  6. Cover the pot and let it stand for a few minutes
  7. Add the fresh herbs
  8. Serve and enjoy!
